I have 6 of these I'd like to deploy (already embedded in nice devices).

    Can this be done?

My controller only allows one gateway, I was hoping I could keep my current W5100 gateway and through some magic add some remote ESP's as nodes.

What Controller do you have? You only hope is that someone creates support for multiple gateways for your controller.
Or you could get another controller that does support multiple GW. Also if your W5100 Ethernet gateway is on the latest MySensors 2.0 release it should support multiple controllers.

It might be possible to put nodered between the gateways and your controller to aggregate the gateways. I don't know how to do that though.
