temperature and humidity inside a refrigerator

I put one of my new si7021 temperature-humidity sensors inside my refrigerator, and I was shocked to see just how high the humidity gets in there between the cooling cycles. Is this normal?

Here's the graph (well, the last hour anyway) of the temp-RH node in a defective freezer that's in need of repair. It stays plenty cold there, but the humidity never drops as it does with the functioning refrigerator (above):

@NeverDie It looks to be what can be expected after googlin' a bit; e.g. https://openawg.github.io/2016/04/19/first-test-chamber-constructed.html
Opening the freezer's door will further disturb things (did it stay closed in both charts?)
Were both measurements aquired using the exact same si7021 sensor?
